Milk chocolate ganaches or truffles

With the Gastrovac (a low-pressure cooker), I succeeded to ensure maximum flavor of Malagasy vanilla. By means of intermediate substances (Japanese sake and mirin,sweet cooking rice wine) I blend the vanilla flavor into Shiromiso(white miso), which is often used in Kyo-Ryori(Kyoto cuisine).
This is milk chocolate based bonbon chocolat.
