As I was born and bred in Kyoto, I have familiarized myself with fine Uji-Matcha.
In this two layered chocolate, I have made matcha ganache (the upper layer) with white chocolate and kinmokusei (fragrant olive) ganache with milk chocolate.
Ganashes or Truffles using mixed dark/milk/white for coating and fillings .
