The 67% cacao Sierra Nevada is like a naturally free-spirited, charmingly wayward woman, while the 66% Tumaco is a well-traveled man whose wealth of experiences have given him a tolerant and open-minded character. These two cacao varieties, evoking different genders and personas, combine and melt together as one. The elegance and opulence of Sierra Nevada’s red wine and raisin tones grab our attention, but mask a slight underlying astringency. This waywardness draws us in and captures us, and no one can resist the flavor once under its spell. This “femme fatale” is accommodated and counterbalanced by the maturely aromatic Tumaco with its spicy, smoky notes. They complement one another perfectly, and it makes perfect sense that this original Es Koyama couverture blends two varieties from the heart of Colombia, the original source of cacao. To bring out their character to the fullest, Chef Koyama fermented, sun-dried, and roasted them himself, and a long process of refinement has crystallized in this concoction.
